After recieving this Email I have now had to change my phone and any info he may of had.....It took some legal action to protect myself from this guy, but I felt safer knowing his info he thought he had was now changed.

It's just your typical scammer bluff. They hate losing - especially to a woman - and will do anything to try and get the upper hand back. If scammers did 1% of what they threaten to do, I'd be dead a dozen times already.

Blocking him on Facebook and setting your profile on private can solve the problem. As you noticed, the scammers return using different identities and different email addresses; for this reason is a good option not to accept new friends request for a while from unknown person after one scammer tried to play his little nasty game with you.
